Ingredients
- 4 cucumbers, peeled, halved and sliced
- 1/3 cup shallots, minced
- 1/3 cup green onions, chopped
- 4 Thai chili peppers (less if you don’t like it that hot)
- 1/2 cup rice vinegar
- 2 tbsp sugar
- 1/2 tsp salt
- 1/4 cup chopped cilantro
